괴테가 말한 ‘뿌리와 날개’는 우리가 후손에게 남길 수 있는 영원한 유산을 상징한다. 단단한 토대 위에 서서 스스로의 길을 힘차게 나아갈 수 있는 힘을 의미하는 이 말처럼, 온지음 맛공방은 설립 8년 차에 접어든 2022년 ‘영원한 유산’을 찾는 여정에 나섰다. 그 일 년여의 탐구와 실천을 담아낸 책 『온지음이 차리는 맛 – 뿌리와 날개』는 실체를 한눈에 파악하기 어려웠던 고려의 식문화에 대한 단서를 찾아내고, 이를 온지음 맛공방의 손길로 오늘의 식탁 위에 다시 이어 붙이려는 시도에서 출발한다. 온지음의 깊이 있는 연구와 정갈하게 정리된 레시피, 고려의 식탁을 재현한 담음새, 당시의 개성을 전하는 고지도와 옛 기록, 그리고 고려의 빛나는 유산인 청자 등의 기물을 통해 오늘의 감각 속에서 다시 떠오르는 고려 식문화의 풍취를 한 권에 담아냈다.
Goethe once described the enduring legacy we can leave to future generations as “roots and wings.” Roots provide a firm foundation on which to stand, while wings give the strength to move forward and find one’s own path. In this spirit, Onjium’s Food Studio set out in 2022—its eighth year since founding—on a journey to seek this “lasting heritage.” The book Onjium`s Cookbooks: Roots and Wings captures a year of research and practice devoted to uncovering traces of Goryeo’s culinary culture, whose full form is difficult to grasp at a glance, and carefully reassembling them on the contemporary table through Onjium’s craft. Through rigorous study, thoughtfully organized recipes, table settings that evoke the Goryeo dining culture, historical maps and writings that convey the spirit of the era, and artifacts such as the luminous celadon of Goryeo, the book brings together the elusive yet evocative atmosphere of Goryeo’s food culture as it reemerges through a modern sensibility.
