Onjium planned and organized Seochon Fermentation Culture Week 2025(2025 서촌 발효문화주간), held over five days from July 30 across the Seochon(서촌) neighborhood. Bringing together local brands through fermentation, the project explored the contemporary relevance of traditional fermentation culture and sustainable ways of living within the neighborhood’s daily life. Each participating brand interpreted different aspects of fermentation through its own ingredients and preparation methods, presenting workshops and limited-time menus. The workshop program included 'The Taste of Microbes: Soil and Vegetables,' led by
KYUN(큔) and local farmers; 'Traditional Jang and Fermentation: Summer Side Dishes,' jointly led by Onharu(온하루) and Onjium; 'Liquid Bread and Solid Bread' by Seoul Gypsy(서울집시); 'Porridge, Soup, and Tea' by BOAN1942; and 'Fermentation Meets Cocktails' by Bar Cham. The program also featured a fermented breakfast menu developed by Café Boan and Onharu, limited-time bar snacks from Seoul Gypsy, and special cocktails created by Cham Jecheol and Onharu. Together, these offerings invited visitors to experience fermentation culture as part of everyday life in the neighborhood. On the final day, the participating brands gathered at Onjium for a finale, each presenting its own fermented food and drinks. Through tastings and shared conversations, the event explored fermentation as a cultural practice that connects a place and its community, extending beyond a method of food preparation to become a way of sharing experiences and ideas.
