The Taste of Onjium, presented by the Food Studio of the Onjium, a Seoul-based research institute for Korean cultural heritage, reinterprets the banga cuisine of the Joseon dynasty for today’s table. Based in Seoul’s Seochon neighborhood, Onjium studies the noble household cuisine that preserves many of the original forms of Korean food. Known for its balanced flavors, restrained elegance, and respect for seasonal ingredients, banga cuisine reflects the refined food culture of Joseon’s elite households. Organized around the four seasons, the book introduces a variety of dishes—from aromatic Bangpung-juk porridge to pomegranate-shaped dumplings once enjoyed in the royal court, azalea blossom hwajeon, sweet shrimp mulhoe, and fish maw sundae—revealing the enduring depth and beauty of Korean cuisine.
